Meats Recipes Thai Pork with Lime Recipe

Ingredients

  • 300 g/10 oz loin of pork, cut into

  • 2.5 x 1 cm/1 x 1/2 inch strips

  • 2 tablespoons light soy sauce

  • 1/2 teaspoon pepper

  • 1 tablespoon oil

  • 10 garlic cloves, chopped

  • 15 small green chilies, chopped

  • 4 tablespoons lime juice

  • 4 tablespoons Thai fish sauce

  • 1 tablespoon palm sugar or light muscovado sugar

  • 15 g/1/2 oz mint leaves, finely chopped


Method:

  1. Mix together the pork, soy sauce and pepper in a bowl. Heat the oil in a preheated wok or frying pan.

  2. Add the pork mixture and stir-fry over a high heat for about 6 minutes until the pork is well cooked.

  3. Transfer the pork to a mixing bowl or saucepan and add all the remaining ingredients.

  4. Mix thoroughly for 1-2 minutes, then turn into a serving dish.
