Thai Pork with
Lime Recipe

300 g/10 oz loin of
pork, cut into
-
2.5 x 1 cm/1 x 1/2 inch
strips

2 tablespoons light
soy sauce
-
1/2 teaspoon pepper
-
1 tablespoon oil
-
10 garlic cloves,
chopped
-
15 small green
chilies, chopped
-
4 tablespoons lime
juice
-
4 tablespoons Thai
fish sauce
-
1 tablespoon palm
sugar or light muscovado sugar
-
15 g/1/2 oz mint
leaves, finely chopped
Method:

Mix together the pork, soy sauce and pepper in a
bowl. Heat the oil in a preheated wok or frying pan.

Add the pork mixture and stir-fry over a high heat
for about 6 minutes until the pork is well cooked.

Transfer the pork to a mixing bowl or saucepan and
add all the remaining ingredients.

Mix thoroughly
for 1-2 minutes, then turn into a serving dish.
