Thin Steak on a
Bed of Hot Leaves Recipe

4 x 175 g/6
oz entrecote steaks

8 tablespoons olive oil
-
4
tablespoons lemon juice
-
2
tablespoons red wine vinegar
-
250 g/8 oz
mixed hot salad leaves
-
sea salt and pepper
Method:
-
Spread out a piece of grease proof paper, place
a steak in the middle and cover with another
piece of paper.

Using a rolling pin or meat
mallet, gently beat the steak until it is at
least twice its original size. Repeat with the
other steaks.

Mix together the olive oil, lemon
juice, red wine vinegar and seasoning. Pour over
the leaves and toss well.

Divide the salad
leaves between 4 large plates. Heat a griddle
pan or nonstick frying pan until very hot.

Season the steaks on both sides, place on the
griddle and flash-cook on both sides just long
enough to sear the meat.

Place the steaks on the
salad leaves and serve immediately.
