Meats Recipes Veal Chops with Savory Butter Recipe

Ingredients

Serve 6

  • 2 garlic cloves

  • 150 g/5 oz butter, diced

  • 3 anchovy fillets, chopped

  • 1 tablespoon chopped parsley

  • 1 lemon

  • 12 veal chops

  • 125 ml/4 fl oz dry white wine

  • 6 tablespoons olive oil

  • 1/2 teaspoon chopped rosemary

  • salt and pepper

  • lettuce leaves, to garnish


Method:

  1. Finely chop 1 garlic clove and mix with the diced butter and anchovies in a small bowl.

  2. Add the chopped parsley and season with a squeeze of lemon juice and pepper to taste.

  3. Work the mixture together and form it into a 2 cm/3/4 inch diameter cylinder. Wrap in foil and put in the refrigerator to harden.

  4. Flatten the veal with a mallet. Make a marinade using the wine, half the oil, the rosemary, the other garlic clove, crushed, the remaining lemon juice and salt and pepper to taste. Marinate the veal for 3 hours.

  5. Drain the chops and cook under a hot grill, using the remaining oil to baste them.

  6. Serve topped with slices of anchovy butter and lettuce leaves.
