Chili Fried
Noodles with Asparagus Recipe

oil, for deep-frying

2 tablespoons chopped shallots
-
1 tablespoon chopped garlic
-
1 tablespoon groundnut oil
-
2 eggs, beaten
-
325 g/11
oz rice stick noodles, soaked and drained

2
tablespoons sugar
-
1 1/2 tablespoons soy sauce
-
50 g/2
oz asparagus, cut into 2.5 cm/1 inch
lengths
-
1 celery stick, finely chopped
-
1 teaspoon pepper
-
1 tablespoon crushed dried
chilies
-

Method:
-
Heat the oil
in a wok or large saucepan to 180-190°C
(350-375°F) or until a cube of bread browns in
30 seconds.

Throw in the
shallots and fry for 1 1/2-2 minutes. Remove
with a slotted spoon, then drain on kitchen
paper.

Repeat with
the garlic, cooking for 40 seconds. Reserve the
flavored oil for another recipe.

Heat the
groundnut oil in a wok or large frying pan. Add
the eggs, stir them around, then add the
shallots and garlic, and stir-fry for 30
seconds.

Add the
noodles and fry briefly, then add all the
remaining ingredients. Stir-fry vigorously for
2-3 minutes, turn on to a warmed dish and serve.
