Pasta, Noodles and Rice Recipes - Chili Fried Noodles with Asparagus Recipe

Ingredients

Serve 3-4

  • oil, for deep-frying

  • 2 tablespoons chopped shallots

  • 1 tablespoon chopped garlic

  • 1 tablespoon groundnut oil

  • 2 eggs, beaten

  • 325 g/11 oz rice stick noodles, soaked and drained

  • 2 tablespoons sugar

  • 1 1/2 tablespoons soy sauce

  • 50 g/2 oz asparagus, cut into 2.5 cm/1 inch lengths

  • 1 celery stick, finely chopped

  • 1 teaspoon pepper

  • 1 tablespoon crushed dried chilies

  • salt


Method:

  1. Heat the oil in a wok or large saucepan to 180-190°C (350-375°F) or until a cube of bread browns in 30 seconds.

  2. Throw in the shallots and fry for 1 1/2-2 minutes. Remove with a slotted spoon, then drain on kitchen paper.

  3. Repeat with the garlic, cooking for 40 seconds. Reserve the flavored oil for another recipe.

  4. Heat the groundnut oil in a wok or large frying pan. Add the eggs, stir them around, then add the shallots and garlic, and stir-fry for 30 seconds.

  5. Add the noodles and fry briefly, then add all the remaining ingredients. Stir-fry vigorously for 2-3 minutes, turn on to a warmed dish and serve.
