Chow Mien Recipe

500 g/1 lb egg
noodles
4 tablespoons
vegetable oil
1 onion, thinly
sliced
125 g/4 oz cooked
meat (pork, chicken or ham), cut into thin shreds
125 g/4 oz mangetout or
green beans
125 gl4 oz bean
sprouts
1 teaspoon salt
2-3 spring onions,
thinly shredded
2 tablespoons light
soy sauce
1 tablespoon sesame
seed oil or chili sauce, to serve
Method:
Cook the
noodles in a large saucepan of boiling salted water
according to packet instructions, then drain and rinse
under cold running water until cool, and set aside.
Heat
about
3
tablespoons of the oil in a hot wok or large frying pan,
add the onion, meat, mangetout or beans and the bean
sprouts, and stir-fry for about 1 minute.
Add the salt
and stir a few times more, then remove from the wok or
pan with a perforated spoon and keep hot.
Heat the remaining oil in the wok or pan and add the
spring onions and the noodles, with about half of the
meat and vegetable mixture. Mix with the soy sauce,
then stir-fry for 1-2 minutes, or until heated through.
Transfer the mixture to a large warmed serving dish,
then pour the remaining meat and vegetable mixture on
top.
Sprinkle with the sesame seed oil or
chili sauce,
or both if preferred, and serve immediately.
