Pepper Pilaf Recipe
Ingredients
Serve

3 tablespoons olive oil
-
1 red onion
or small onion, finely
chopped
-
2 plump garlic
cloves, crushed
-
1 red chilli, deseeded and finely
chopped
-
1 red pepper, cored, deseeded and cut
lengthways into 8 pieces
-
1 yellow pepper,
cored, deseeded and cut lengthways into 8 pieces
-
paprika
-
250 g/8 oz couscous
-
300 ml/1/2 pint
boiling Vegetable Stock
-
small handful
of coriander leaves, chopped, to serve

salt
Method:
-
Heat the oil in a saucepan, add the onion and
cook until it begins to soften. Stir in the
garlic, chili and peppers.

Cook for 3-4
minutes, then season to taste with paprika and
cook for 1 minute. Add the couscous, give it a
good stir, then add the boiling stock.

Bring
back to the boil, then simmer gently, uncovered,
for about 15 minutes until most of the stock has
been absorbed and the peppers are tender; if the
pilaf becomes too dry add a little more stock or
water.

Add salt
to
taste, stir in the coriander, and serve.
