2 tablespoons
vegetable oil
1 garlic clove,
crushed
150 g/5 oz pork fillet,
sliced
3
tablespoons
light soy sauce
2 eggs
1 tablespoon tomato
puree
1 tablespoon sugar
1 small onion,
sliced
750 g/1 1/2 lb cold, cooked
long-grain rice
Method:
Heat the oil in a wok
or large frying pan, add the garlic and stir-fry for
1 minute.
Add the pork fillet and 1 teaspoon of the soy sauce and stir-fry for 5
minutes over a moderate heat. Break the eggs into
the wok or pan and cook for 2 minutes, stirring
vigorously.
Add the tomato puree, sugar, the
remaining soy sauce and the sliced onion. Stir-fry
briskly for 1 minute. Add the rice and
continue stir-frying for 5 minutes.
Transfer the
mixture to a warmed serving dish or
4 warmed plates and garnish with the sliced
cucumber, lemon wedges, chopped coriander and
shredded red chili. Serve immediately.
