Pasta, Noodles and Rice Recipes - Fried Rice with Pork Recipe

Ingredients

Serve 4

  • 2 tablespoons vegetable oil

  • 1 garlic clove, crushed

  • 150 g/5 oz pork fillet, sliced

  • 3 tablespoons light soy sauce

  • 2 eggs

  • 1 tablespoon tomato puree

  • 1 tablespoon sugar

  • 1 small onion, sliced

  • 750 g/1 1/2 lb cold, cooked long-grain rice


Method:

  1. Heat the oil in a wok or large frying pan, add the garlic and stir-fry for 1 minute.

  2. Add the pork fillet and 1 teaspoon of the soy sauce and stir-fry for 5 minutes over a moderate heat. Break the eggs into the wok or pan and cook for 2 minutes, stirring vigorously.

  3. Add the tomato puree, sugar, the remaining soy sauce and the sliced onion. Stir-fry briskly for 1 minute. Add the rice and continue stir-frying for 5 minutes.

  4. Transfer the mixture to a warmed serving dish or 4 warmed plates and garnish with the sliced cucumber, lemon wedges, chopped coriander and shredded red chili. Serve immediately.
