Pasta, Noodles and Rice Recipes - Fusilli with Parmesan and Pine Nuts Recipe

Ingredients

Serve 4

  • 300 g/10 oz fusilli

  • 125 g/4 oz pine nuts

  • 75 g/3 oz butter

  • 2 tablespoons olive oil

  • 75 g/3 oz Parmesan cheese, freshly grated

  • handful of basil leaves

  • salt and pepper


Method:

  1. Cook the pasta until al dente. Toast the pine nuts in a dry frying pan over a moderate heat, stirring constantly, until golden.

  2. Melt the butter with the oil in a small saucepan. Drain the pasta thoroughly, pour over the butter, season with salt and pepper, and toss well.

  3. Turn into a warmed serving dish, sprinkle with the pine nuts, Parmesan and basil leaves, and serve immediately.
