Pasta, Noodles and Rice Recipes - Green Couscous Recipe

Ingredients

Serve 6

  • 300 ml/1/2 pint olive oil

  • 125 ml/4 fl oz lemon juice

  • 500 g/1 lb cooked couscous

  • 2 bunches of spring onions, chopped

  • 125 g/4 oz rocket, chopped

  • 1 cucumber, halved, deseeded and chopped

  • salt and pepper


Method:

  1. Whisk or shake together the oil and lemon juice. Season to taste with salt and pepper.

  2. Tip the couscous into a warmed serving dish. Stir in the spring onions, rocket, cucumber, and oil and lemon juice dressing, and serve immediately.
