300 ml/1/2 pint olive
oil

125 ml/4 fl oz lemon
juice

500 g/1 lb cooked couscous

2 bunches of spring
onions, chopped

125 g/4 oz rocket, chopped
-
1
cucumber, halved, deseeded and chopped

salt and
pepper
Method:

Whisk or shake together the oil and lemon juice.
Season to taste with salt and pepper.

Tip the
couscous into a warmed serving dish. Stir in the
spring onions, rocket, cucumber, and oil and lemon
juice dressing, and serve immediately.
