Pasta, Noodles and Rice Recipes - Lemon and Basil Orzo Recipe

Ingredients

Serve 4

  • 300 g/10 oz orzo

  • 2 garlic cloves, crushed

  • large handful of basil leaves

  • 5 tablespoons olive oil

  • rind and juice of 2 lemons

  • 150 g/5 oz Parmesan cheese, freshly grated

  • salt and pepper


Method:

  1. Cook the pasta until al dente. Using a pestle and mortar or a food processor, blend the garlic, basil, olive oil, lemon rind and juice until smooth.

  2. Add the Parmesan to the basil mixture, blend well and season with salt and pepper. Drain the orzo thoroughly.

  3. Add the pesto and mix well so that the sauce is distributed evenly throughout the orzo. Serve immediately.
