Prawn, Sun-dried Tomato and Mushroom Sauce Recipe

oz linguine verde or spaghetti

8 tablespoons olive oil
-
375 g/12
oz button mushrooms, sliced
-
375 g/12
oz large raw prawns, peeled and deveined
-
40 g/1
1/2 oz sun-dried tomatoes in oil, drained
and chopped

2 tablespoons lemon juice
-
1 bunch of spring onions, diagonally sliced

3
tablespoons chopped basil
-
salt and pepper
Method:

Cook the pasta until al dente.
Meanwhile, heat the oil in a large
frying pan until almost smoking.

Add the
button mushrooms and stir-fry for 2
minutes. Add the prawns and sun-dried
tomatoes, and stir-fry for 3 minutes.

Add the lemon juice and spring onions,
and stir-fry for another 2 minutes. Stir
in the basil and season to taste with
salt and pepper.

Drain the pasta, transfer to a warmed
serving dish and toss with half of the
sauce.

Spoon the remaining sauce over
the top, and serve immediately.
