Pasta, Noodles and Rice Recipes - Linguine with Prawn, Sun-dried Tomato and Mushroom Sauce Recipe

Ingredients

Serve 4

  • 300 g/10 oz linguine verde or spaghetti

  • 8 tablespoons olive oil

  • 375 g/12 oz button mushrooms, sliced

  • 375 g/12 oz large raw prawns, peeled and deveined

  • 40 g/1 1/2 oz sun-dried tomatoes in oil, drained and chopped

  • 2 tablespoons lemon juice

  • 1 bunch of spring onions, diagonally sliced

  • 3 tablespoons chopped basil

  • salt and pepper


Method:

  1. Cook the pasta until al dente. Meanwhile, heat the oil in a large frying pan until almost smoking.

  2. Add the button mushrooms and stir-fry for 2 minutes. Add the prawns and sun-dried tomatoes, and stir-fry for 3 minutes.

  3. Add the lemon juice and spring onions, and stir-fry for another 2 minutes. Stir in the basil and season to taste with salt and pepper.

  4. Drain the pasta, transfer to a warmed serving dish and toss with half of the sauce.

  5. Spoon the remaining sauce over the top, and serve immediately.
