Pasta, Noodles and Rice Recipes - Macaroni with Anchovies and Garlic Recipe

Ingredients

Serve 4

  • 2 anchovy fillets

  • a little milk

  • 4 tablespoons oil

  • 1 garlic clove

  • 50 g/2 oz smoked bacon, rinded and diced

  • 400 g/13 oz can plum tomatoes, drained and cut into strips

  • 50 g/2 oz pined black olives, chopped

  • 1/2 teaspoon chopped oregano

  • 375 g/12 oz macaroni

  • 25 g/1 oz pecorino cheese, freshly grated

  • salt and pepper


Method:

  1. Soak the anchovy fillets in a little milk to remove excess salt, then drain.

  2. Heat the oil in a saucepan, add the garlic clove and the anchovies and cook over a moderate heat for a few minutes, then remove the garlic and add the bacon.

  3. When the bacon is crisp, add the tomatoes to the pan. Season with salt and pepper, and cook over a low heat for about 10 minutes, then add the olives and oregano.

  4. Cook for about another 10 minutes, until a thick sauce has formed.

  5. Meanwhile, cook the pasta until al dente. Drain the pasta, transfer to a warmed serving bowl, pour on the sauce and sprinkle with the pecorino. Mix well and serve.
