Anchovies and Garlic Recipe

anchovy
fillets

a
little milk

4 tablespoons oil

1 garlic clove
-
50 g/2 oz smoked bacon, rinded and diced
-
400 g/13
oz can plum tomatoes, drained and cut into
strips
-
50 g/2 oz pined black olives, chopped
-
1/2 teaspoon chopped oregano
-
375 g/12 oz macaroni
-
25 g/1 oz pecorino cheese, freshly grated

salt and pepper
Method:
-
Soak the anchovy fillets in a little milk to remove
excess salt, then drain.

Heat
the oil in a saucepan, add the garlic clove and the
anchovies and cook over a moderate heat for a few
minutes, then remove the garlic and add the bacon.

When the bacon is crisp, add the tomatoes to the
pan. Season with salt and pepper, and cook over a
low heat for about 10 minutes, then add the olives
and oregano.

Cook for about another 10 minutes,
until a thick sauce has formed.

Meanwhile, cook the pasta until al dente.
Drain the pasta, transfer to a warmed serving bowl,
pour on the sauce and sprinkle with the pecorino.
Mix well and serve.
