Pasta, Noodles and Rice Recipes - Noodles Tossed with Meat and Vegetables Recipe

Ingredients

Serve 4-6

  • 375 g/12 oz noodles

  • 2 tablespoons oil

  • 2 green chilies, deseeded and thinly sliced

  • 1 garlic clove, thinly sliced

  • 375 g/12 oz minced pork

  • 2 carrots, cut into matchsticks

  • 3 celery sticks, cut into matchsticks

  • 1/2 cucumber, cut into matchsticks

  • 4 spring onions, sliced

  • 1 small green pepper, cored, deseeded and sliced

  • 1 tablespoon soy sauce

  • 2 tablespoons sweet red bean paste

  • 1 tablespoon dry sherry


Method:

  1. Cook the noodles according to the packet instructions, then drain well.

  2. Meanwhile, heat the oil in a wok or deep frying pan, add the chilies and garlic, and stir-fry for about 30 seconds. Add the pork and cook for 2 minutes.

  3. Increase the heat, add the carrots, celery, cucumber, onions and green pepper, and cook for 1 minute.

  4. Stir in the soy sauce, bean paste, sherry and noodles. Stir well to mix and heat through.

  5. Pile on to a warmed serving dish and serve immediately.
