Pasta Bake with
Spinach and Ham Recipe

2 tablespoons olive
oil
1 onion, chopped
1 garlic clove,
chopped
750 g/1 1/2 lb
spinach, chopped
pinch of grated
nutmeg
8 sheets of lasagne
250 g/8 oz ham,
chopped into large chunks
125 g/4 oz buffalo
mozzarella cheese, thinly sliced
125 g/4 oz fontina
cheese, freshly grated
salt and pepper
Method:
Heat the olive oil in a saucepan, add the onion and
garlic, and sauté for 3 minutes.
Add the spinach and mix well, cook for 2 minutes
over a moderate heat, so that the spinach just
starts to wilt. Add nutmeg, salt and pepper to
taste.
If using dried lasagne, cook until al dente, drain well and pat dry.
Lightly oil a large shallow baking dish, place a
layer of lasagne at the bottom, followed by a layer
of spinach, then ham and then a layer of mozzarella.
Repeat until all the ingredients are used, finishing
with lasagne and the fontina cheese.
Place the dish at the top of a preheated oven,
200°C (400°F),
Gas Mark 6, and bake for 15 minutes until golden
brown and bubbling. Serve hot.
