Pasta, Noodles and Rice Recipes - Penne with Sausages and Mixed Vegetables Recipe

Ingredients

Serve 4

  • 3 tablespoons olive oil

  • 25 g/1 oz butter

  • 1/2 onion, finely chopped

  • 1 small shallot, finely chopped

  • 1 small carrot, finely diced

  • 1 celery stick, sliced

  • 125 g/4 oz Italian sausage, crumbled

  • 1 small yellow pepper, cored, deseeded and diced

  • 4 basil leaves, finely chopped

  • 50 ml/2 fl oz dry red wine

  • 400 g/13 oz can plum tomatoes

  • 425 g/14 oz penne

  • 2 tablespoons freshly grated pecorino cheese

  • 2 tablespoons freshly grated Parmesan cheese

  • salt and pepper

  • basil sprigs, to garnish


Method:

  1. Heat the oil and butter in a flameproof casserole, add the onion, shallot, carrot and celery and cook over a low heat for 4 minutes.

  2. Mix well and then add the sausage, pepper and basil. Brown over a medium heat for 3-4 minutes, then add the red wine.

  3. When the wine has evaporated, strain the juice from the tomatoes and add the tomatoes to the casserole dish with salt and pepper to taste. Cook the sauce for 30 minutes, stirring from time to time.

  4. Meanwhile, cook the pasta until al dente. Drain well. Tip the pasta into the casserole and mix well.

  5. Sprinkle with the grated cheeses and mix again. Garnish with basil sprigs and serve hot.
