Pasta, Noodles and Rice Recipes - Penne with Tomato and Chili Recipe

Ingredients

Serve 4

  • 3 tablespoons olive oil

  • 1 onion, chopped

  • 2 garlic cloves, chopped

  • 2 pinches of crushed dried chilies, or to taste

  • 300 g/10 oz penne

  • 10 plum tomatoes, skinned, deseeded and cut into strips

  • 1 teaspoon sugar

  • 1 teaspoon vinegar

  • handful of flat leaf parsley, chopped

  • salt and pepper

  • 75 g/3 oz Parmesan cheese, freshly grated, to serve


Method:

  1. Heat the oil in a saucepan, add the onion and garlic, and sauté until soft but not browned. Add the chilies.

  2. Cook the pasta until al dente. Add the tomatoes to the onion mixture. Over a low heat, add the sugar, vinegar and salt and pepper.

  3. Mix gently and simmer slowly until the pasta is cooked. Drain the pasta well. Stir the parsley into the tomato sauce.

  4. Add the sauce to the pasta, mix well, adding a dash of olive oil, if liked. Serve with a bowl of grated Parmesan.
