Pasta, Noodles and Rice Recipes - Spaghetti with Rocket and Ricotta Recipe

Ingredients

Serve 4

  • 300 g/10 oz spaghetti

  • 1 tablespoon olive oil

  • 25 g/1 oz butter

  • 1 small onion, finely chopped

  • bunch of rocket, leaves finely chopped

  • 1 garlic clove, finely chopped

  • 125 g/4 oz ricotta cheese

  • 125 ml/4 fl oz dry white wine

  • salt and pepper

  • freshly grated Parmesan cheese, to serve


Method:

  1. Cook the pasta until al dente. Meanwhile, heat the oil and butter in a saucepan until foaming.

  2. Add the onion and cook gently, stirring for 5 minutes until softened. Add the rocket, garlic, and salt and pepper to taste, and stir for 2-3 minutes until wilted.

  3. Add the ricotta and wine, and stir until the ricotta has melted and mixed evenly with the rocket.

  4. Drain the spaghetti, return to the pan and add the rocket mixture. Toss well and serve sprinkled with Parmesan.

Note: You can substitute spinach for the rocket, but be generous with the pepper.
