Spicy Fried Rice
with Red Chilies Recipe
Ingredients
Serve

375 g/12 oz long-grain rice
2 tablespoons sunflower oil
4 shallots or
1 onion,
thinly sliced
2 red chillies,
deseeded and thinly sliced
50 g/2 oz chopped pork,
beef or bacon
1 tablespoon light
soy sauce
1 teaspoon tomato
puree
salt
To garnish:
few slices of fried
onion
1 plain omelets,
made with 1
egg, cut into strips
coriander leaves
cucumber slices
Method:
Cook the rice according to packet instructions and keep hot.
Heat the oil in a wok or large frying pan, add the
shallots and chilies, and fry for 1-3 minutes.
Add
the meat and fry for 3 minutes, stirring constantly.
Add the rice, soy sauce and tomato puree and
stir-fry for
5-8 minutes,
then
season to taste with salt.
Transfer to a warmed serving dish, garnish with the
onion, omelets, coriander and cucumber, and serve
immediately.
