Pasta, Noodles and Rice Recipes - Spicy Fried Rice with Red Chilies Recipe

Ingredients

Serve 4

  • 375 g/12 oz long-grain rice

  • 2 tablespoons sunflower oil

  • 4 shallots or 1 onion, thinly sliced

  • 2 red chillies, deseeded and thinly sliced

  • 50 g/2 oz chopped pork, beef or bacon

  • 1 tablespoon light soy sauce

  • 1 teaspoon tomato puree

  • salt 

To garnish:

  • few slices of fried onion

  • 1 plain omelets, made with 1 egg, cut into strips

  • coriander leaves

  • cucumber slices


Method:

  1. Cook the rice according to packet instructions and keep hot.

  2. Heat the oil in a wok or large frying pan, add the shallots and chilies, and fry for 1-3 minutes.

  3. Add the meat and fry for 3 minutes, stirring constantly. Add the rice, soy sauce and tomato puree and stir-fry for 5-8 minutes, then season to taste with salt.

  4. Transfer to a warmed serving dish, garnish with the onion, omelets, coriander and cucumber, and serve immediately.
