Spinach Tortellini
with Blue Cheese Dressing Recipe

500 g/1 lb spinach tortellini
300 g/10 oz Gorgonzola or dolcelatte cheese
75 g/3
oz butter
150
ml/1/4
pint double cream
pepper
Method:
Cook the
pasta until al dente.
Crumble the cheese into a small saucepan, add the butter
and cream and place over a low heat to melt the cheese
and warm the mixture.
Season with pepper. Drain
the pasta well, return to the pan, add the sauce and
toss well.
Transfer to a warmed serving dish and serve
immediately.
