Pasta, Noodles and Rice Recipes - Spinach Tortellini with Blue Cheese Dressing Recipe

Ingredients

Serve 4

  • 500 g/1 lb spinach tortellini

  • 300 g/10 oz Gorgonzola or dolcelatte cheese

  • 75 g/3 oz butter

  • 150 ml/1/4 pint double cream

  • pepper


Method:

  1. Cook the pasta until al dente. Crumble the cheese into a small saucepan, add the butter and cream and place over a low heat to melt the cheese and warm the mixture.

  2. Season with pepper. Drain the pasta well, return to the pan, add the sauce and toss well.

  3. Transfer to a warmed serving dish and serve immediately.
