Pasta, Noodles and Rice Recipes - Tagliatelle with Crab Sauce Recipe

Ingredients

Serve 4

  • 2 tablespoons olive oil

  • 2 shallots, chopped

  • 200 g/7 oz crab meat

  • 1-2 pinches dried chili, crumbled

  • grated rind and juice of 1 lemon

  • 300 g/10 oz tagliatelle

  • 4 tablespoons double cream

  • handful of chives, snipped

  • salt and pepper

  • 75 g/3 oz Parmesan cheese, freshly grated, to serve


Method:

  1. Heat the olive oil in a saucepan, add the shallots and sauté gently until soft, but do not brown.

  2. Add the crab meat, chilies, lemon rind and juice, and season with salt and pepper. Cook the pasta until al dente.

  3. Add the cream to the crab mixture and bring to the boil. Drain the tagliatelle well. Add the chives to the crab mixture.

  4. Add the sauce to the tagliatelle, mix well and serve with a bowl of grated Parmesan.
