Pasta, Noodles and Rice Recipes - Thai Fried Rice with Beans and Tofu Recipe

Ingredients

Serve 4

  • groundnut oil, for deep-frying

  • 125 g/4 oz block ready-fried tofu, diced

  • 2 eggs

  • 250 g/8 oz cold, cooked long-grain rice

  • 3 teaspoons sugar

  • 1 1/2 tablespoons soy sauce

  • 2 teaspoons crushed dried chilies

  • 1 teaspoon Thai fish sauce or salt

  • 125 g/4 oz green beans, finely chopped

  • 25 g/1 oz deep-fried mint leaves, to garnish


Method:

  1. Heat the oil for deep-frying in a wok or large frying pan, add the tofu and deep-fry over a moderate heat until golden brown on all sides.

  2. Remove from the oil with a slotted spoon, drain on kitchen paper and set aside. Pour the oil out of the wok or pan, leaving behind about 2 tablespoonfuls.

  3. Heat this oil until hot, then crack the eggs into it, breaking the yolks and stirring them around.

  4. Add the rice, sugar, soy sauce, chilies and fish sauce, increase the heat to high, and stir-fry vigorously for 1 minute.

  5. Lower the heat and add the green beans and tofu. Increase the heat again and stir-fry vigorously for 1 minute.

  6. Transfer to a warmed serving dish, garnish with deep-fried mint leaves, and serve.
