Pasta, Noodles and Rice Recipes - Thai Noodles in Spicy Gravy Recipe

Ingredients

Serve 4

  • 1 tablespoon groundnut oil

  • 300 g/10 oz dried rice stick noodles, soaked and drained

  • 750 ml/1 1/4 pints Vegetable Stock

  • 5 tablespoons corn flour

  • 5 tablespoons water

  • 150 g/5 oz broccoli

  • 25 g/1 oz spring onions, cut into 2.5 cm/1 inch lengths

  • 2 red chilies, chopped

  • 1 1/2 teaspoons sugar

  • 1/4 teaspoon salt

  • 1 teaspoon soy sauce

  • 1 teaspoon black bean sauce

  • 1 tablespoon deep-fried garlic slices

  • salt and pepper


Method:

  1. Heat the oil in a wok or large frying pan, add the noodles and stir-fry for 2-3 minutes until they are softened and cooked.

  2. Meanwhile, bring the stock to the boil in a saucepan. Mix the corn flour and measured water thoroughly, then add to the boiling stock, together with the broccoli and spring onions.

  3. Boil slowly and add the chilies, sugar, salt, soy sauce and black bean sauce. Stir until the gravy thickens, then add the deep-fried garlic and salt and pepper to taste.

  4. Transfer the noodles to a warmed serving bowl, pour the gravy over them and serve immediately.
