375 g/12 oz rice

tablespoon groundnut oil

garlic cloves, chopped
-
4
large red chilies, sliced

50 g/2 oz drained canned straw mushrooms
-
50 g/2 oz
oyster mushrooms, torn

125 g/4 oz drained canned bamboo shoots
-
1 teaspoon
sugar
-
1/2
teaspoon salt
-
1
teaspoon soy sauce
-
coriander sprigs, to garnish
Method:

Cook
the rice according to the packet instructions.

Meanwhile, heat the oil in a wok, add the garlic and
chilies, and stir-fry for 30 seconds.

Add the mushrooms
and bamboo shoots and stir-fry again for 1 minute, then
lower the heat and add the sugar, salt and soy sauce.

Give the
mixture another good stir, then taste and adjust the
seasoning.

Transfer the rice to a warmed serving bowl,
top with the vegetables, garnish with coriander, and
serve.
