Pasta, Noodles and Rice Recipes - Thai Rice with Vegetables and Chilies Recipe

Ingredients

Serve 4

  • 375 g/12 oz rice

  • 1 tablespoon groundnut oil

  • 4 garlic cloves, chopped

  • 4 large red chilies, sliced

  • 50 g/2 oz drained canned straw mushrooms

  • 50 g/2 oz oyster mushrooms, torn

  • 125 g/4 oz drained canned bamboo shoots

  • 1 teaspoon sugar

  • 1/2 teaspoon salt

  • 1 teaspoon soy sauce

  • coriander sprigs, to garnish


Method:

  1. Cook the rice according to the packet instructions.

  2. Meanwhile, heat the oil in a wok, add the garlic and chilies, and stir-fry for 30 seconds.

  3. Add the mushrooms and bamboo shoots and stir-fry again for 1 minute, then lower the heat and add the sugar, salt and soy sauce.

  4. Give the mixture another good stir, then taste and adjust the seasoning.

  5. Transfer the rice to a warmed serving bowl, top with the vegetables, garnish with coriander, and serve.
