Crab and Parmesan Calzonelli Recipe

 

Ingredients

  • 1 quantity Basic Pizza Dough

  • 115g/4 oz mixed prepared crab meat, defrosted if frozen

  • 15ml/1 tbsp double cream

  • 30ml/2 tbsp freshly grated Parmesan

  • 30ml/2 tbsp chopped fresh parsley

  • 1 garlic clove, crushed

  • salt and ground black pepper

  • fresh parsley sprigs, to garnish

Makes 10-12


Method:

  1. Preheat the oven to 200C. Roll out the pizza dough on a lightly floured surface to 3mm/1/8 in thick.

  2. Using a 7.5cm/3 in plain round pastry cutter, stamp out ten to twelve circles of dough.

  3. In a bowl, mix together the crab meat, cream, Parmesan, parsley and garlic, and season to taste with salt and pepper.

  4. Spoon a little of filling on to one half of each circle. Dampen the edges of the dough with water and fold over to enclose the filling.

  5. Seal the edges by pressing with a fork. Place well apart on two greased baking sheets.

  6. Bake for 10-15 minutes, until golden. Garnish with parsley sprigs.

Notes: If you prefer, use prawns instead of crab meat. If frozen, make sure they are fully thawed first.
