Grilled Polenta with Peppers Recipe

 

Ingredients

  • 115g/4 oz polenta

  • 25g/1 oz butter

  • 15-30ml/1-2 tbsp mixed chopped herbs such as parsley, thyme and sage

  • melted butter, for brushing

  • 60ml/4 tbsp olive oil

  • 1-2 garlic cloves, cut into slivers

  • 2 roasted red peppers, peeled and cut into strips

  • 2 roasted yellow peppers, peeled and cut into strips

  • 15ml/1 tbsp balsamic vinegar

  • salt and ground black pepper

  • fresh herbs sprigs, to garnish

Serves 4


Method:

  1. Bring 600ml/1 pint salted water to the boil in a heavy saucepan. Trickle in the polenta, beating continuously, then cook gently for 15-20 minutes, stirring occasionally, until the mixture is no longer grainy and comes away from the sides of the pan.

  2. Remove the pan from the heat and beat in the butter, herbs and plenty of pepper.

  3. Pour the polenta into small pudding basin, smooth the surface and leave until cold and firm.

  4. Turn out the polenta on to a board and cut into thick slices. Brush the polenta slices with melted butter and grill each side for about 4-5 minutes, until golden brown.

  5. Meanwhile, heat the olive oil in a frying pan, add the garlic and peppers and stir-fry for 1-2 minutes. Stir in the balsamic vinegar and seasoning.

  6. Spoon the pepper mixture over the polenta slices and garnish with fresh herb sprigs. Serve hot.
