Macaroni Cheese with Mushrooms Recipe

 

Ingredients

  • 450g/1 lb quick-cooking elbow macaroni

  • 45ml/3 tbsp olive oil

  • 225g/8 oz button mushrooms, sliced

  • 2 fresh thyme sprigs

  • 50g/2 oz plain flour

  • 1 vegetable stock cube

  • 600ml/1 pint milk

  • 2.5ml/1/2 tsp celery salt

  • 5ml/1 tsp Dijon mustard

  • 175g/6 oz grated Cheddar

  • 25g/1 oz generous 1/4 cup freshly grated Parmesan cheese

  • 25g/1 oz pine nuts

  • salt and ground black pepper

Serves 4


Method:

  1. Bring a saucepan of salted water to the boil and cook the macaroni according to the instructions on the packet.

  2. Heat the oil in a heavy saucepan and cover and cook the mushrooms and thyme over gentle heat for 2-3 minutes.

  3. Stir in the flour and draw from the heat, add the stock cube and stir continuously until evenly blended. Add the milk a little at a time, stirring after each addition.

  4. Add the celery salt, mustard and Cheddar cheese and season to taste with salt and pepper. Stir and simmer for about 1-2 minutes, until the sauce has thickened.

  5. Preheat a moderate grill. Drain the macaroni well, toss into the sauce and turn out into four individual dishes or one large flameproof gratin dish.

  6. Scatter with grated Parmesan cheese and pine nuts, hen grill until brown and bubbly.
