Marinara Pizza Recipe

 

Ingredients

  • 60ml/4 tbsp olive oil

  • 675g/1 1/2 plum tomatoes, peeled, seeded and chopped

  • 1 pizza base, 25-30cm diameter

  • 4 garlic cloves, cut into slivers

  • 15ml/1 tbsp chopped fresh oregano

  • salt and ground black pepper

Serves 2-3


Method:

  1. Preheat the oven to 220C. In a saucepan, heat 30ml/2 tbsp of the oil. Add the tomatoes and cook, stirring frequently for about 5 minutes until soft.

  2. Place the tomatoes in a metal sieve and leave them to drain for about 5 minutes.

  3. Transfer the tomatoes to a food processor or blender and puree until smooth.

  4. Brush the pizza base with half the remaining oil. Spoon over the tomatoes and sprinkle with garlic and oregano. Drizzle over the remaining oil and season to taste. Bake for 15-20 minutes until crisp and golden. Serve at once.

Notes: Ready-made pizza bases are available from most supermarkets and come in a range of sizes. It is useful to keep a few in the freezer.
