Mushroom and Pancetta Pizza Recipe

 

Ingredients

  • 1 quantity Basic Pizza Dough

  • 60ml/4 tbsp olive oil

  • 2 garlic cloves, crushed

  • 225g/8 oz fresh mixed ceps and chestnut mushrooms, roughly chopped

  • 75g/3 oz pancetta, roughly chopped

  • 15ml/1 tbsp chopped fresh oregano

  • 45ml/3 tbsp freshly grated Parmesan cheese

  • salt and ground black pepper

Serves 4


Method:

  1. Preheat the oven to 220C. Divide the dough into four pieces and roll out each one on a lightly floured surface to 13cm/5 in circle. Place well apart on two greased baking sheets.

  2. Heat 30ml/2 tbsp of the olive oil in a frying pan and fry the garlic and mushrooms gently until the mushrooms are tender and the juices have evaporated. Season to taste with salt and pepper, then cool.

  3. Brush the pizza base with 15ml/1 tbsp oil, then spoon over the mushrooms. Scatter over the pancetta and oregano.

  4. Sprinkle with Parmesan and drizzle over the remaining oil. Bake for 10-15 minutes, until crisp. Serve immediately.

Notes: Pancetta is available in larger supermarkets and Italian delicatessens. If you cannot find it, use thickly sliced fried bacon instead.
