Quattro Formaggi Recipe

 

Ingredients

  • 1 quantity Basic Pizza Dough

  • 15ml/1 tbsp garlic oil

  • 1/2 small red onion, very thinly sliced

  • 50g/2 oz dolce latte

  • 50g/2 oz mozzarella

  • 50g/2 oz grated Gruyere

  • 30ml/2 tbsp freshly grated Parmesan

  • 15ml/1 tbsp chopped fresh thyme

  • pinch of black pepper

Serves 4


Method:

  1. Preheat the oven to 220C. Divide the dough into four pieces and roll out each one on a lightly floured surface into 13cm/5 in circle.

  2. Place well apart on two greased baking sheets, then push up the dough edges to make a thin rim. Brush with garlic oil and top with the red onion.

  3. Cut the dolce latte and mozzarella into dice and scatter over the bass. Mix together the Gruyere, Parmesan and thyme and sprinkle over.

  4. Grind over plenty of pepper. Bake for 15-20 minutes until crisp and golden and the cheese are bubbling. Serve hot.
