Rice with Seeds and Spices Recipe

 

Ingredients

  • 5ml/1 tsp sunflower oil

  • 2.5ml/ 1/2 tsp ground turmeric

  • 6 cardamom pods, lightly crushed

  • 5ml/1 tsp coriander seeds, lightly crushed

  • 200g/7 oz basmati rice

  • 400ml/14 fl oz stock

  • 120ml/4 fl oz natural yogurt

  • 15ml/1 tbsp each toasted sunflower seeds and toasted sesame seeds

  • salt and ground black pepper

  • fresh coriander leaves, to garnish

Serves 4


Method:

  1. Heat the oil in a non-stick frying pan and fry the spices and garlic for about 1 minute. stirring all the time.

  2. Add the rice and stock, bring to the boil, then cover and simmer for 15 minutes or until just tender.

  3. Stir in the yogurt and the toasted sunflower and sesame seeds. Adjust the seasoning and serve hot, garnished with coriander leaves.

Notes: Although basmati rice gives the best texture and flavor, you could substitute ordinary long grain rice if you prefer.
