Tagliatelle with Prosciutto Recipe

 

Ingredients

  • 115g/4 oz prosciutto

  • 450/1 lb tagliatelle

  • 75g/3 oz butter

  • 50g/2 oz grated Parmesan cheese

  • salt and ground black pepper

  • a few fresh sage leaves, to garnish

Serves 4


Method:

  1. Cut the prosciutto into strips of the same width as the tagliatelle. Cook the pasta in plenty of boiling salted water according to the instructions on the packet.

  2. Meanwhile, melt the butter gently in a saucepan and heat the prosciutto strips through, but do not fry.

  3. Drain the tagliatelle well and pile into warm serving dish. Sprinkle all the Parmesan cheese over the top.

  4. Pour the buttery prosciutto over the top of the tagliatelle and Parmesan. Season well with pepper and garnish with the sage leaves.

Notes: Buy Parmesan cheese in a block and grate it yourself. The flavor is far superior to that of ready-grated Parmesan cheese.
