350g/12 oz fresh mixed wild mushrooms, washed
and sliced
2 shallots, chopped
2 garlic cloves, finely chopped
30ml/2 tbsp chopped fresh mixed thyme and flat
leaf parsley
1 quantity Basic Pizza Dough
40g/1 1/2oz grated Gruyere cheese
30ml/2 tbsp freshly grated Parmesan
salt and ground black pepper

Method:
Preheat the oven to 220C. Heat 30ml/2 tbsp of the
oil in a frying pan and fry the mushrooms, shallots
and garlic over a moderate heat, stirring
occasionally, until all the juices have evaporated.
Stir in half the herbs and seasoning, then set aside
to cool.
Divide the dough into fours pieces and roll out each
one on a lightly floured surface to 13cm circle.
Place well apart on two greased baking sheets, then
push up the dough edges to form a thin rim.
Brush
the pizza bases with the remaining oil and top with
the wild mushrooms mixture.
Mix together the Gruyere and Parmesan, then sprinkle
over. Bake for 15-20 minutes until crisp and golden.
Remove from the oven and scatter over the remaining
herbs to serve.
Notes: If you cannot find
wild mushrooms, a mixture of cultivated mushrooms, such
as shiitake, oyster and chestnut, would do just as well.
