Poultry and Game Recipes - Barbecued Duck with Ginger and Sesame Seeds Recipe

Ingredients

Serve 4

  • 4 boneless, skinless duck breasts

  • 2 tablespoons brown sugar

  • 1 teaspoon salt

  • 4 tablespoons light soy sauce

  • 1 tablespoon sesame oil

  • 1 cm/1/2 inch piece of fresh root ginger, finely chopped

  • 1 teaspoon sesame seeds


Method:

  1. Cut each duck breast into 8 even-sized pieces. Mix the remaining ingredients in a large bowl and add the duck.

  2. Stir, cover and marinate for 3-4 hours in a cool place or overnight in the refrigerator. Spoon the marinade over the duck several times to coat the pieces evenly.

  3. Remove the duck from the marinade with a slotted spoon and thread on to 8 bamboo skewers or 4 large metal skewers.

  4. Place the skewers on a moderately hot barbecue or under a preheated grill and cook the small skewers for 8-10 minutes, the larger ones for 10-12 minutes.

  5. Turn the skewers several times during cooking and baste with the remaining marinade. Serve the duck hot or cold, either on or off the skewers.
