Barbecued Duck
with Ginger and Sesame Seeds Recipe

4 boneless, skinless
duck breasts
2
tablespoons brown
sugar
1 teaspoon salt
4 tablespoons light soy
sauce
1 tablespoon sesame oil
1 cm/1/2 inch piece of
fresh root ginger, finely chopped
1 teaspoon sesame
seeds
Method:
Cut each duck breast into 8 even-sized pieces. Mix
the remaining ingredients in a large bowl and add
the duck.
Stir, cover and marinate for 3-4 hours in
a cool place or overnight in the refrigerator. Spoon
the marinade over the duck several times to coat the
pieces evenly.
Remove the duck from the marinade with a slotted
spoon and thread on to 8 bamboo skewers or 4 large
metal skewers.
Place the skewers on a moderately hot barbecue or
under a preheated grill and cook the small skewers
for 8-10 minutes, the larger ones for 10-12 minutes.
Turn the skewers several times during cooking and
baste with the remaining marinade. Serve the duck
hot or cold, either on or off the skewers.
