Poultry and Game Recipes - Carnival Chicken with Sweet Potato Mash Recipe

Ingredients

Serve 4

  • 4 skinless chicken breasts

  • flat leaf parsley sprigs, to garnish 

Marinade:

  • 100 ml/3 1/2 fl oz sweet sherry

  • 1 teaspoon Angostura bitters

  • 1 tablespoon light soy sauce

  • 1 tablespoon chopped fresh root ginger

  • pinch of ground cumin

  • pinch of ground coriander

  • 1 teaspoon dried mixed herbs

  • 1 small onion, finely chopped

  • 75 ml/3 fl oz Chicken Stock (see page 141)

Sweet potato mash:

  • 2 sweet potatoes

  • 2 tablespoons fromage frais (optional)

  • salt and pepper


Method:

  1. Place the chicken breasts in a non-metallic dish. Mix together all the marinade ingredients in a bowl.

  2. Spoon the marinade over the chicken, making sure all the pieces are well coated. Cover and leave to marinate in the refrigerator overnight.

  3. Place the chicken breasts on a grill pan and cook under a preheated moderate grill for 20 minutes, turning them over halfway through cooking.

  4. Meanwhile, boil the sweet potatoes in their skins for 20 minutes until soft. Drain well and peel.

  5. Mash the potato and let it dry off slightly, then stir in the fromage frais, if using.

  6. Season to taste with salt and pepper and serve with the chicken. Garnish with the parsley.
