Chicken and Fennel
with Dill Dressing Recipe

Method:
-
Heat a griddle
pan or nonstick frying pan. Put on the chicken and
cook for 6-8 minutes on each side. Remove and keep
warm.

Add the fennel to the pan and cook for 4
minutes on each side. Remove from the pan and keep
warm.

Return the chicken to the pan and cook for
another 3 minutes on each side to
give a
good
crust to the skin.

Mix together the oil, vinegar,
dill and seasoning. Serve the chicken and fennel
with the dressing poured over.
-
This dish can be
served either hot or at room temperature, as you
prefer.
