Poultry and Game Recipes - Chicken and Fennel with Dill Dressing Recipe

Ingredients

Serve 4

  • 8 chicken thighs, boned

  • 2 fennel heads, sliced

  • 4 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1 bunch of dill, chopped

  • sea salt and pepper


Method:

  1. Heat a griddle pan or nonstick frying pan. Put on the chicken and cook for 6-8 minutes on each side. Remove and keep warm.

  2. Add the fennel to the pan and cook for 4 minutes on each side. Remove from the pan and keep warm.

  3. Return the chicken to the pan and cook for another 3 minutes on each side to give a good crust to the skin.

  4. Mix together the oil, vinegar, dill and seasoning. Serve the chicken and fennel with the dressing poured over.

  5. This dish can be served either hot or at room temperature, as you prefer.
