Poultry and Game Recipes - Chicken with Olives Recipe

Ingredients

Serve 4

  • 175 g/6 oz black olives, pitted and chopped

  • 1 tablespoon chopped parsley

  • 1 tablespoon chopped chervil

  • 1 tablespoon chopped tarragon

  • 1 tablespoon chopped watercress

  • 3 garlic cloves, chopped

  • 150 g/5 oz butter, melted

  • 4 chicken portions

  • 3 tablespoons olive oil

  • 1 bouquet garni

  • salt and pepper


Method:

  1. Mix half of the black olives with all the fresh herbs, the watercress, garlic and melted butter. Season to taste with salt and pepper.

  2. Rub the prepared herb, olive and butter mixture all over the chicken portions and transfer them to a large ovenproof dish.

  3. Prick the skin of the chicken all over with a sharp knife, then sprinkle with the olive oil. Add the bouquet garni to the dish.

  4. Roast the chicken in a preheated oven, 200°C (400°F), Gas Mark 6, for 35-40 minutes.

  5. Remove and discard the bouquet garni and serve the chicken garnished with the remaining olives.
