Poultry and Game Recipes - Chicken with Wild Mushrooms Recipe

Ingredients

Serve 4

  • 50 g/2 oz dried wild mushrooms, or 250 g/8 oz fresh mushrooms, sliced

  • 50 g/2 oz plain flour

  • 4 boneless, skinless chicken breasts

  • 50 g/2 oz butter

  • 1 tablespoon olive oil

  • 2 shallots, diced

  • 2 garlic cloves, chopped

  • 125 ml/4 fl oz white wine

  • 125 g/4 oz mascarpone cheese

  • handful of chives, snipped

  • salt and pepper


Method:

  1. If using dried mushrooms, put them into a bowl and just cover with hot water. Leave to soak for 15 minutes.

  2. Meanwhile, season the flour with salt and pepper and toss the chicken in the seasoned flour to cover all over.

  3. Heat the butter and oil in a frying pan. Add the chicken and cook for 4 minutes on each side until colored. Remove the chicken and keep warm.

  4. Add the shallots and garlic to the pan and fry over a low heat for 5 minutes. Add the wine and mix well to include any tasty brown bits from the pan. Add the mascarpone and the mushrooms to the pan; if using dried mushrooms, add the soaking liquid.

  5. Mix well to melt the mascarpone. If the mixture is very runny, turn up the heat to evaporate some of the liquid.

  6. If you are using fresh mushrooms, add a little extra liquid, but remember that mushrooms make their own liquid as they cook.

  7. Return the chicken to the pan and simmer gently for 10 minutes, turning it from time to time. Finally stir the snipped chives into the pan, season to taste with salt and pepper and serve immediately.
