Orange Sauce Recipe

tablespoons vegetable oil
750
g/1 1/2 lb skinless duck breast, cut into thin strips
across the grain
seeds of 6
cardamom pods, crushed
pepper
orange
segments, to garnish
boiled or steamed rice, to serve
Sauce:
1
tablespoon corn flour
4
tablespoons water
6 tablespoons fresh orange juice
1
tablespoon Chinese rice wine or dry sherry
1 tablespoon
soy sauce
1
teaspoon dark soft brown sugar
1
teaspoon Chinese five-spice powder
Method:
First prepare the sauce. Mix the
corn flour to a thin
paste with the water, then stir in the orange juice,
rice wine or sherry, soy sauce, sugar and five-spice
powder. Set aside.
Heat the oil in a preheated wok or frying pan over a
moderate heat. Add the duck strips and crushed
cardamom seeds, increase the heat to high and
stir-fry for 3-4 minutes, or until lightly colored
on all sides.
Stir the sauce to mix, then pour into
the wok and bring to the boil, stirring constantly.
Stir-fry for a further 1-2 minutes until the duck is
tender and coated in the sauce.
Season with pepper
to taste and serve immediately with plain boiled or
steamed rice and garnished with orange segments.
