Poultry and Game Recipes - Ginger Chicken with Honey Recipe

Ingredients

Serve 4

  • 5 spring onions, sliced into 1 cm/1/2 inch pieces

  • 50 g/2 oz piece of fresh root ginger, finely chopped

  • 2 tablespoons vegetable oil

  • 375 g/12 oz boneless, skinless chicken breasts, thinly sliced

  • 3 chicken livers, chopped

  • 2 tablespoons dried Chinese black mushrooms, soaked in warm water for 20 minutes

  • 1 onion, sliced

  • 3 garlic cloves, crushed

  • 2 tablespoons soy sauce

  • 1 tablespoon clear honey


Method:

  1. Put the spring onions into a bowl, cover with cold water and leave to soak until required.

  2. Mix the chopped ginger with a little cold water, then drain and squeeze to remove its heat. Rinse under cold running water and drain well.

  3. Heat the oil in a preheated wok or frying pan over moderate heat. Add the chicken and chicken livers and stir-fry for 5 minutes. Remove with a slotted spoon and set aside.

  4. Drain the mushrooms and squeeze them dry. Discard the stalks. Add the onion to the wok and fry over a low heat until soft. Add the garlic and mushrooms and stir-fry for 1 minute.

  5. Return the cooked chicken pieces and chicken livers to the wok. Mix the soy sauce and honey, stirring until blended. Pour over the chicken and stir well.

  6. Add the drained ginger and stir-fry for 2-3 minutes. Add the drained spring onions, mix well, then transfer to a serving dish.

  7. This dish tastes even better if it is cooked the day before and then reheated.
