Poultry and Game Recipes - Italian Sweet and Sour Rabbit Recipe

Ingredients

Serve 4

  • 75 g/3 oz plain flour

  • 1 rabbit, cut into 8 pieces

  • 2 tablespoons olive oil

  • 1 onion, diced

  • 1 garlic clove, crushed

  • 300 ml/1/2 pint red wine

  • 1 rosemary sprig

  • 4 tablespoons balsamic vinegar

  • 1 tablespoon brown sugar

  • 2 tablespoons sultanas

  • 2 tablespoons pine nuts, toasted

  • 2 tablespoons black olives, pitted and roughly chopped

  • salt and pepper


Method:

  1. Season the flour with salt and pepper. Coat the rabbit evenly allover in the seasoned flour. 

  2. Heat the olive oil in a large frying pan. Add the rabbit pieces, turning to brown them all over, then remove with a slotted spoon and set aside.

  3. Add the onion and garlic and fry over a low heat for 5 minutes until softened, but do not allow to brown.

  4. Return the rabbit to the pan, pour in the red wine, add the rosemary, vinegar, sugar and sultanas and season to taste with salt and pepper.

  5. Simmer for 20 minutes, turning the rabbit to coat it in the sauce and cook evenly.

  6. Just before serving, add the pine nuts and olives and stir to mix well.
