Kashmiri Chicken Recipe

50 g/2
oz ghee or 2 tablespoons vegetable
oil
3 large onions, finely sliced
10 peppercorns
10 cardamoms
5 cm/2 inch piece of cinnamon stick
5 cm/2 inch piece of fresh root ginger,
finely chopped
2 garlic cloves, finely
chopped
1 teaspoon
chili powder
2 teaspoons paprika
1.5 kg/3
lb skinless chicken pieces
250 ml/8
fl oz natural yogurt salt
Method:
Heat the ghee or
vegetable oil in a deep frying pan. Add the onions,
peppercorns, cardamoms and cinnamon and fry until
the onions are golden.
Add the ginger, garlic,
chili powder, paprika and salt to taste and fry,
stirring occasionally, for 2 minutes.
Add the chicken pieces and fry until browned.
Gradually add the yogurt, stirring constantly. Cover
and cook gently for about 30 minutes.
