Poultry and Game Recipes - Mexican Orange Chicken Recipe

Ingredients

Serve 4

  • 1 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • pinch of ground cloves

  • 4 skinless chicken portions

  • 2 tablespoons oil

  • 1 onion, chopped

  • 2 garlic cloves, crushed

  • 150 ml/1/4 pint fresh orange juice

  • 150 ml/1/4 pint Chicken Stock

  • 2 tablespoons raisins

  • 2 green chilies, deseeded and sliced

  • 50 g/2 oz slivered almonds

  • 3 oranges, peeled and thinly sliced

  • 2 tablespoons chopped coriander


Method:

  1. Mix together the salt, ground cinnamon and cloves and rub this spicy mixture allover the chicken portions to flavor them. 

  2. Heat the oil in a large frying pan. Add the chicken and fry, turning occasionally, until all the chicken pieces are browned all over.

  3. Remove from the pan and pour off any excess fat. Keep the chicken warm. Add the onion and garlic to the pan and fry over a low heat until tender and golden.

  4. Return the chicken to the pan and stir in the orange juice, stock, raisins and chilies. Cover the pan and simmer for 1 hour, or until the chicken is cooked and tender.

  5. Add the almonds and the orange slices and stir gently. Heat through over a low heat for about 5 minutes. Serve the orange chicken sprinkled with chopped coriander.
