Mexican Orange
Chicken Recipe
Ingredients
Serve
4
-
1
teaspoon salt
-
1/2 teaspoon ground cinnamon
-
pinch of ground cloves
-
4
skinless chicken portions
-
2
tablespoons oil
-
1 onion, chopped
-
2 garlic cloves, crushed
-
150 ml/1/4 pint
fresh
orange juice
-
150 ml/1/4 pint Chicken Stock
-
2
tablespoons raisins
-
2 green
chilies, deseeded and sliced
-
50 g/2 oz
slivered almonds
-
3
oranges,
peeled and thinly sliced
-
2
tablespoons chopped coriander
Method:
-
Mix together the salt, ground cinnamon and cloves
and rub this spicy mixture allover the chicken
portions to flavor them.
-
Heat the oil in a
large frying pan. Add the chicken and fry, turning
occasionally, until all the chicken pieces are
browned all over.
-
Remove from the pan and pour off
any excess fat. Keep the chicken warm. Add the onion
and garlic to the pan and fry over a low heat until
tender and golden.
-
Return the chicken to the pan and
stir in the orange juice, stock, raisins and chilies. Cover the pan and simmer for 1 hour, or
until the chicken is cooked and tender.
-
Add the
almonds and the orange slices and stir gently. Heat
through over a low heat for about 5 minutes. Serve
the orange chicken sprinkled with chopped coriander.
