Poultry and Game Recipes - Oriental Turkey Parcels Recipe

Ingredients

Serve 4

  • 1 tablespoon soy sauce

  • 1 tablespoon dry sherry

  • 1 tablespoon sesame oil

  • 500 g/1 lb turkey breast, cut into 16 equal pieces

  • 4 spring onions, each cut into 4 pieces

  • 5 cm/2 inch piece of fresh root ginger, shredded

  • 1/2 red pepper, cored, deseeded and shredded

  • 1 celery stick, shredded

  • 4 tablespoons oil


Method:

  1. Mix the soy sauce, sherry and sesame oil together, add the turkey and toss well to coat. Leave to marinate for 15-20 minutes.  

  2. Cut out 16 pieces of foil large enough to enclose the pieces of turkey generously.

  3. Brush the foil with oil, place a piece of turkey in the centre of each and top with a piece of spring onion, ginger, pepper and celery.

  4. Fold the foil over to enclose the turkey and seal the edges well. Heat the oil in a preheated wok or heavy-based frying pan.

  5. Add the foil parcels and fry for about 2 minutes each side. Remove from the pan and leave to drain.

  6. Reheat the oil to very hot and return the turkey parcels to the pan for 1 minute. Drain well and serve immediately in the silver parcels.
