Poultry and Game Recipes - Provencal Chicken with Fragrant Herbs Recipe

Ingredients

Serve 4

  • 1.5-2 kg/3-4 lb chicken

  • 4 tablespoons lemon juice

  • 3 tablespoons olive oil

  • 25 g/1 oz butter, melted

  • pinch of herbes de Provence

  • 1 lemon, peeled and sliced

  • salt and pepper

  • lemon slices, to garnish

  • boiled rice or vegetables, to serve


Method:

  1. Place the chicken in a roasting tin and brush it all over with the lemon juice.

  2. Mix 2 tablespoons of olive oil with the butter, salt, pepper and herbs. Coat the chicken with this sauce.

  3. Place the lemon slices inside the chicken, then roast in a preheated oven, 180°C (350°F), Gas Mark 4, for 1 1/2-1 1/4 hours.

  4. Sprinkle the chicken with the remaining olive oil just before carving.

  5. Serve the chicken garnished with lemon slices and accompanied by plain boiled rice or vegetables.
