Provencal Chicken
with Fragrant Herbs Recipe

1.5-2 kg/3-4 lb
chicken

4 tablespoons lemon
juice
-
3 tablespoons olive
oil
-
25 g/1 oz butter,
melted
-
pinch of herbes de
Provence
-
1 lemon, peeled and
sliced
-
salt and pepper
-
lemon slices, to
garnish
-
boiled rice or
vegetables, to serve
Method:
-
Place the chicken in a roasting tin and brush it all
over with the lemon juice.
-
Mix 2 tablespoons of
olive oil with the butter, salt, pepper and herbs.
Coat the chicken with this sauce.

Place the lemon
slices inside the chicken, then roast in a preheated
oven, 180°C (350°F), Gas Mark 4, for
1 1/2-1 1/4
hours.
-
Sprinkle the chicken with the remaining olive
oil just before carving.

Serve the chicken garnished
with lemon slices and accompanied by plain boiled
rice or vegetables.
