Poultry and Game Recipes - Stir-fried Chicken with Celery Recipe

Ingredients

Serve 3-4

  • 250 g/8 oz boneless, skinless chicken breasts, shredded

  • 1/2 teaspoon salt

  • 1 egg white

  • 1 tablespoon corn flour

  • 4 tablespoons vegetable oil

  • 2.5 cm/1 inch piece of fresh root ginger, cut into thin strips

  • 2 spring onions, cut into thin strips

  • 1 small celery stick, cut into strips

  • 1 green pepper, cored, deseeded and cut into thin strips

  • 2 tablespoons soy sauce

  • 1 tablespoon dry sherry


Method:

  1. Place the chicken in a bowl. Add the salt, egg white and corn flour and mix thoroughly. Heat the oil in a preheated wok or frying pan.

  2. Add the chicken shreds and stir-fry over a moderate heat until the chicken is lightly and evenly colored.

  3. Remove the chicken with a slotted spoon and set aside. Increase the heat and, when the oil is very hot, add the ginger and spring onions followed by the celery and green pepper.

  4. Stir-fry for about 30 seconds over a high heat. Return the chicken shreds to the wok, together with the soy sauce and sherry.

  5. Mix well and cook, stirring constantly, for a further 1-1 1/2 minutes. Transfer to a serving dish and serve immediately.
