Poultry and Game Recipes - Stir-fried Lemon Chicken with Vegetables Recipe

Ingredients

Serve 4

  • 375 g/12 oz boneless, skinless chicken breasts

  • 2 tablespoons Chinese rice wine or dry sherry

  • 4 spring onions, chopped

  • 2.5 cm/1 inch piece of fresh root ginger, finely chopped

  • 2 tablespoons sunflower oil

  • 1-2 garlic cloves, sliced

  • 2 celery sticks, sliced diagonally

  • 1 small green pepper, cored, deseeded and sliced lengthways

  • 2 tablespoons light soy sauce

  • 2 tablespoons lemon juice

  • shredded rind of 2 lemons

  • 1/2 teaspoon chili powder

To garnish:

  • lemon slices

  • parsley sprig


Method:

  1. Cut the chicken into 7 cm/3 inch strips. Mix the wine or sherry with the spring onions and ginger.

  2. Add the chicken and toss well to coat the pieces. Set aside to marinate for 15 minutes.

  3. Heat the oil in a preheated wok or frying pan. Add the garlic, celery and green pepper and stir-fry for 1 minute. Add the chicken in its marinade and cook for a further 2 minutes.

  4. Stir in the soy sauce, lemon juice and rind and the chili powder, and cook for a further 1 minute.

  5. Transfer to a warm serving dish and garnish with lemon slices and a sprig of parsley.
