Stir-fried Turkey
in Sweet and Sour Sauce Recipe
Ingredients

1 tablespoon sunflower oil
-
1 onion, finely chopped
-
500 g/1 lb turkey breast, cut into cubes
-
1/2 yellow or red pepper, cored, deseeded and sliced

3
mushrooms, sliced
-
spring onion, to garnish
Sauce:
-
4 1/2 teaspoons light soy sauce
-
4 1/2 teaspoons tomato puree
-
2 teaspoons corn flour
-
300 ml/1/2 pint water
-
3 tablespoons unsweetened pineapple juice
-
2 tablespoons
wine vinegar
-
1 1/2 teaspoons brown sugar
Method:
-
First, make the sauce. Place all the ingredients in
a small pan and mix well.

Bring to the boil, then
simmer, stirring, until thickened. Keep warm.

Heat
the oil in a preheated wok or frying pan. Add the
onion and stir-fry for 2 minutes.

Add the turkey and
stir-fry for 2-3 minutes. Add the pepper and
mushrooms and cook for 2-3 minutes.

Transfer to a
warm serving dish and pour over the sauce. Garnish
with spring onion and serve hot.
