Poultry and Game Recipes - Stir-fried Turkey in Sweet and Sour Sauce Recipe

Ingredients

Serve 4

  • 1 tablespoon sunflower oil

  • 1 onion, finely chopped

  • 500 g/1 lb turkey breast, cut into cubes

  • 1/2 yellow or red pepper, cored, deseeded and sliced

  • 3 mushrooms, sliced

  • spring onion, to garnish

Sauce:

  • 4 1/2 teaspoons light soy sauce

  • 4 1/2 teaspoons tomato puree

  • 2 teaspoons corn flour

  • 300 ml/1/2 pint water

  • 3 tablespoons unsweetened pineapple juice

  • 2 tablespoons wine vinegar

  • 1 1/2 teaspoons brown sugar


Method:

  1. First, make the sauce. Place all the ingredients in a small pan and mix well.

  2. Bring to the boil, then simmer, stirring, until thickened. Keep warm.

  3. Heat the oil in a preheated wok or frying pan. Add the onion and stir-fry for 2 minutes.

  4. Add the turkey and stir-fry for 2-3 minutes. Add the pepper and mushrooms and cook for 2-3 minutes.

  5. Transfer to a warm serving dish and pour over the sauce. Garnish with spring onion and serve hot.
