Poultry and Game Recipes - Tangy Chicken Livers with Broccoli Recipe

Ingredients

Serve 4

  • 2 tablespoons sesame oil

  • 25 g/1 oz butter

  • 2 garlic cloves, crushed

  • 250 g/8 oz mushrooms, thinly sliced

  • 500 g/1 lb chicken livers, trimmed and roughly chopped

  • 125 g/4 oz broccoli, chopped

  • 1 tablespoon grated orange rind

  • 4 tablespoons orange juice

  • 2 tablespoons dry sherry

  • pinch of ground ginger

  • salt and pepper

  • 2 tablespoons chopped parsley, to garnish


Method:

  1. Heat the oil and butter in a large frying pan. Add the garlic and fry gently, stirring, for 1 minute until the garlic has softened.

  2. Add the mushrooms and chicken livers and cook, stirring occasionally, for 5 minutes until the chicken livers are browned on all sides.

  3. Add the broccoli, orange rind and juice, sherry and ground ginger. Season the mixture with a little salt and plenty of pepper.

  4. Bring to the boil, reduce the heat, cover and simmer for 5-6 minutes, or until the broccoli is just tender but still crisp.

  5. Adjust the seasoning to taste and transfer to a serving dish. Garnish with the parsley and serve immediately.
