Livers with Broccoli Recipe
Ingredients

2 tablespoons sesame oil

25 g/1 oz butter
-
2 garlic cloves, crushed
-
250 g/8 oz mushrooms, thinly sliced
-
500 g/1
lb chicken livers, trimmed and
roughly chopped
-
125 g/4 oz broccoli, chopped
-
1 tablespoon grated orange rind
-
4 tablespoons orange juice
-
2 tablespoons dry sherry
-
pinch of ground ginger
-
salt and pepper
-
2 tablespoons chopped parsley, to garnish
Method:

Heat the oil and butter in a large frying pan. Add
the
garlic and fry gently, stirring, for 1 minute
until the garlic has softened.

Add the mushrooms and
chicken livers and cook, stirring occasionally, for
5 minutes until the chicken livers
are browned on all
sides.

Add the broccoli, orange rind and juice,
sherry and ground
ginger. Season
the mixture with a little salt and plenty of pepper.

Bring to the boil, reduce the heat, cover and simmer
for 5-6 minutes, or until the broccoli is just
tender but still crisp.

Adjust the seasoning to taste
and transfer to a serving dish. Garnish with the
parsley
and serve immediately.
