Poultry and Game Recipes - Thai Chili Fried Duck Recipe

Ingredients

Serve 2

  • 1/4 roast duck

  • 2 tablespoons oil

  • 3 large garlic cloves, finely chopped

  • 1/2 onion, sliced

  • 25 g/1 oz carrot, sliced

  • 50 g/2 oz mixed green, red and yellow peppers, cored deseeded and sliced

  • 3 baby corn cobs, diagonally sliced

  • 1 broccoli floret, chopped

  • 4 sugar snap peas or mangetout

  • 2 small green chilies, finely sliced

  • 1 teaspoon palm sugar or light muscovado sugar

  • 2 tablespoons light soy sauce

  • 3 tablespoons Chicken Stock

  • basil leaves, to garnish


Method:

  1. Take the skin and meat off the duck, chop into bite sized pieces and set aside.

  2. Heat the oil in a preheated wok or frying pan. Add the garlic and stir-fry for 10 seconds.

  3. Add the duck, stir briefly and then add the onion, carrot, mixed peppers, corn cobs, broccoli and sugar snap peas or mangetout.

  4. Stir-fry vigorously for 20 seconds, add the chili and cook, stirring, for 45 seconds.

  5. Finally, add the sugar, light soy sauce and chicken stock, mixing them thoroughly with the contents of the wok for 3 minutes.

  6.  Turn on to a serving dish and garnish with basil leaves.
