350 g/12 oz turkey breast, cut into
4 cm/1 1/2
inch pieces

grated rind and juice of
2 oranges
-
1 tablespoon corn
flour
-
1 tablespoon sunflower oil
-
1 teaspoon sesame oil
-
1/2 red pepper, cored, deseeded and cut into neat
strips

1/2
green pepper, cored, deseeded and cut into neat strips

3 celery sticks, diced
-
125 g/4 oz carrots, cut into matchstick slices

salt and pepper

boiled rice, to serve
Marinade:
Method:

First, make the marinade. Mix the soy sauce and
orange juice together in a shallow dish. Place the
turkey pieces in the marinade and leave for 30
minutes.

Measure the orange juice and add sufficient water to
make up to 150 ml/1/4 pint. Blend the corn flour with
this and add a little salt and pepper.

Lift the
turkey from the marinade and drain well. Reserve the
marinade.

Heat the 2 oils in a preheated wok or
heavy-based frying pan. Add the turkey pieces and
stir-fry for 4-5 minutes. Add the orange rind,
peppers, celery and carrots.

Continue stir-frying
for a further 3 minutes. Pour in the corn flour and
orange juice mixture, together with any marinade
that may be left.

Stir as the liquid comes to the
boil and thickens slightly. Serve immediately with
plain boiled rice.
